Ketchup on a hot dog???

    I always get ketchup on me dogs. Good stuff. .

    I do sometimes get some mustard and relish on there.

    That's why you should always use tongs when cooking brats.

     

    Now how do you cook your brats?  I prefer to brown them on the grill for about 6 minutes and then give them a 25 minute beer bath.  I know others like to give them the beer bath first and then brown them on the grill.

    NO ketchup on Vienna All Beef Hot Dogs... give me a break!!!!  Mustard, Celery Salt, Neon Green Relish, Pickle Quarter, Tomato Slice, Poppy Seed and Sport Peppers... that's how it works.  You know that.  And to the dude who doesn't put peppers on his It Beef... You're proud of that?  You shouldn't do peppers anyway, GIARDENIARA baby!!

    What's going on up there anyway?  I move to Tampa and everyone forgets how to put a dog together?

    When you ask for hot peppers on your beef you get Giardiniera.  It's just easier to ask for hot peppers.

    C'mon on guys.  You don't ask for giardeniara or "hot peppers" on your beef.  You simply specify "sweet" or "hot" (or both)

    Right, but most places if you don't specify will ask if you want peppers.  Say yes and the next question is "sweet or hot?" and if you say hot you get giardiniera.  I've never heard a place ask someone if they want giardiniera.

    Now there's a place in Mundelein called Emil's and they have awesome Italian beef and giardiniera pizza.  I've tried Italian beef pizza at other places but I haven't found a place that does it as good as Emil's.

    I'm a beer bath first, grill 2nd and back to the bath kind of guy.  The important thing is to keep the bath from boiling.  Just let them simmer for 20 minutes so the skin doesn't burst.  Then while you're grilling them babies increase the heat on the beer bath so it reduces and the flavor intensifes.  I also use a lot of onions in there.  When the brats go back to the bath a culinary masterpiece is complete.

    The other thing is that I don't like using a big fat bun.  Too much bread takes away from the deeeelishisness of the meat.

    For those in TX and westward -- Wienerschintzel has "Chicago Style" dogs ~ with pickles and all. :) Not quite as good as the ones you find in Chicago... but worth a try. :)

    Onions. Check.

    Mustard. Check (only yellow).

    Ketchup. Maybe, maybe not.

    Saurkraut. Nah...I can't get past the smell. It's too brutal for me.

    Hebrew National is the closet thing to Vienna I can get where I live. Gene n Jude's better get ready next time I'm in Chicago.
